Essential to the success of any racing team is the performance of the guys in the pits: their energy levels need to be consistent, their efforts focussed and their health maintained.
Catering for Markland Racing pit garage required a menu that would satisfy good appetites, provide essential nutritional balance as well as the all important taste and presentation.
The 15-man team enjoyed a number of buffet lunch menus, one of which included seared minute steak with red onion marmalade, char grilled chicken breast with Mediterranean vegetables and pesto, chilli-marinated haloumi cheese with wild mushrooms, all served with new potato & chive salad, classic Caesar salad and a salad of sun-blushed tomatoes and wild rocket as well as penne pasta salad with roasted peppers and olives.
